Absinthe - An Educational Video from Chow

I love Chowhound. I use it any time we are going out of town and I want to find the best "foodie" restaurants.

So I should probably explain how I came across a video talking about absinthe. We are planning a trip to Las Vegas and I wanted to make reservations for restaurants that we haven't tried yet. Chris and I LOVE food and we love the great food that Las Vegas has to offer. With Aria, Cosmopolitan and that whole area near Mandarin Oriental now open I wanted to see what they had there.

Last year I tried a few restaurants in that area and this year I found Sage at Aria and I started to look at their menu. One menu is the "dessert and absinthe" menu. That caught my attention - it is not something I had ever seen before. I know absolutely nothing about absinthe except what is apparently not even a correct thing - that it is green. On the menu the only US glass of absinthe available was the St. George Verte, a distiller just outside of San Francisco. Their website had this awesome video:



As one of the comments said, I agree that I could listen to Lance speak about anything! He is very well spoken and funny!

My Jalapeño Recipe

OK, I know you guys are just dying to find out what these Bacon-Wrapped Cheese-Filled Jalapeños are all about. So let me just tell you how to make them yourself so you can see how awesome these things are!

First take your fresh jalapeños and cut the stems off, then cut them in half length wise and remove the seeds. Take a half strip of bacon for each half jalapeño and place a half jalapeño in the middle of each half strip of bacon. (to be wrapped up shortly) Next fill each jalapeño half with shreaded cheese (I like cheddar/jack or just cheddar) Then wrap the bacon around the jalapeños and hold them together with toothpicks.

Now to cook them... I like to put them on the grill on aluminum foil with the burner on low. (the burner under the jalapeños is off) and just leave them alone until the bacon is cooked.

Then stand in awe at the beauty before you!
